Country Walking cereal bars

 

In the February 2010 edition of Country Walking magazine they had a wonderful list of 101 walking ideas including things like doing a charity walk, going for a night walk, hike a long distance path - and I have to confess that I have only done one of them - and done it at least 4 times - and thats number 70 ‘Bake your own cereal bar’!  I guess it is intended to be eaten at the top of a mountain after a long days walking - but it has worked brilliantly on more than one massage weekend!



It’s really easy and very tasty as you can include exactly what you like.


Melt 100g butter; 80g brown sugar, 1 tsp cinnamon and 100ml of maple syrup (or golden syrup or honey - or in my case sometimes a mixture of all 3) together.

Mix 200g rolled oats, 30g ground almonds, 50g chopped walnuts (or seeds or any other nuts or any mixture) and 200g chopped dried fruit (have used almost everything including apricots, pears, prunes, figs, mango, cranberries etc etc), then add to the syrup mix.  Stir together and press into a greased and lined tin (about 25 x 18cm) and bake at 160C for 20 to 25 minutes. 

Don’t leave it in too long - take out when looking soft and a bit not done as it carries on cooking in the tin.
